The sourdough process creates lactic acid ensuring a longer life without preservatives or additives. This unique overnight process taking a small quantity of a previous batch of dough starts the fermentation releasing several nutrients otherwise not developed. This makes the product more digestible. Fresh stone milling ensures the maximum retention of essential oils, enzymes and nutrients created.
