Recipe for beef/tofu curry
Ingredients:
1/2 jar of Geo Organics curry paste
3 tablespoons of olive oil
1 onion, peeled and finely chopped
1 red pepper, diced
244g diced beef or tofu or 1 jar of Biona organic chickpeas
Essential Trading basmati brown rice
Fresh coriander
Geo Organics sugar free mango chutney
Method
Fry the onion in the olive oil until softened. Add the peppers. Fry gently for 5 minutes. Add the diced beef. Add half a jar of Geo Organics curry paste, stir thoroughly and simmer for 30/40 minutes.
Serve with Essential Trading brown basmati rice, some fresh coriander and Geo Organics sugar free mango chutney.
You can also serve with natural yoghurt.
The beef can be replaced by Biona Organic Chickpeas or Tofu for a vegetarian option.
