An exceptionally versatile gluten free and wheat free ingredient. Will improve all gluten free bread and cake recipes. Use in low fat baking and salad dressings as well.
Use as a gluten replacer in recipes. 1 teaspoon xanthum gum to 100g of flour.

Improves shelf life in baked goods. Excellent freeze/thaw stability. Highly resistant to temperature variations. Improves mouth feel in low fat cooking. Soluble in hot & cold water. Increases volume in bread and cakes. Very low calorific value.
