What is Miso?
Miso is a traditional food from Japan, where it has been made and eaten for many hundreds of years. Miso is produced by mixing cooked soya beans with salt and water and a starter culture made from rice called Koji. This mixture is placed in wooden kegs to ferment. Gradually the enzymes supplied by the koji break down the complex structure of the soya beans to produce readily digestible amino acids, fatty acids and simple sugars. It can be two years before the miso is ready, but this lengthy ageing process gives the miso a delicious flavour which is at the heart of this soup.
